Roast Turkey Breast

  • 4-5 lb turkey breast
  • 2 Tbs softened butter
  • 1/2 stick butter
  • salt and pepper
  • cheesecloth

Directions

  1. Pat dry the turkey breast with paper towel. Sprinkle it with salt and pepper.
  2. Spread softened butter over the breast meat.
  3. Roast the turkey on a rack in a roasting pan in a preheated 425° F oven for 15 minutes.
  4. Reduce the heat to moderately slow (325° F) and arrange a piece of cheesecloth soaked in 1/2 stick (1/4 cup) butter, melted, over the turkey.
  5. Roast the turkey, basting it every 20 minutes for 1 to 1 1/2 hours more or until meat thermometer registers 160° F.
  6. Remove and discard the cheese cloth and transfer the turkey to a heated platter.

Serves 8 to 10.
