Rao Chicken Curry Overview

  • olive oil
  • onions
  • ginger
  • garlic
  • green chilis
  • cumin
  • turmeric
  • coriander
  • garam masala
  • salt
  • butter
  • potatoes, peeled and cut into 1-inch chunks
  • chicken breast, cut into large chunks
  • whole, peeled tomatoes
  • frozen peas, somewhat defrosted

Directions

  1. Heat some oil in a pan.  Brown the chicken until mostly cooked through and set aside.
  2. Heat some oil in a pot. Add onion, green chilis, and ginger.  Cook, stirring frequently until onions are translucent.
  3. Add all other spices and combine well.
  4. Add the potatoes and cook for 15 minutes, stirring occasionally.
  5. Add peas, tomatoes, and browned chicken. Cook for an additional 30 minutes.
