Peachy Plum Cobbler
8 peaches, peeled, pitted, cut into
1-inch-thick wedges
1 2 plums, pitted, cut into 1-inch-thick
wedges
1 /3 cup sugar
1 tablespoon cornstarch
1 / 2 cup all purpose flour
1 / 4 teaspoon baking powder
Serves 6
Pinch of salt
1 / 2 cup ( 1 stick) unsalted butter,
room temperature
1 /2 cup sugar
1 large egg yolk
1 teaspoon grated lemon peel
1 / 2 teaspoon vanilla extract
Vanilla ice cream (optional)
1. Preheat oven to 3 7 5 °F and butter an 8-inch square baking dish.
2. Mix peaches, plums, sugar, and cornstarch together in a large bowl. Let
stand until sugar dissolves, stirring occasionally, about 5 minutes. Transfer
to prepared dish.
3. Mix flour, baking powder and salt in small bowl and set aside.
4. Using electric mixer, beat butter and sugar in large bowl until smooth.
Beat in egg yolk, lemon peel and vanilla. Add flour mixture; mix just until
moist dough forms.
5. Spoon dough atop fruit, spacing blobs evenly. Bake until juices bubble
thickly and topping is golden, about 55 minutes.
6. Cool slightly and serve with ice cream.
