Cornbread – Gluten Free

  • 2 Tbs butter
  • 1 cup cornmeal
  • 1/2 cup soy flour
  • 1/2 cup brown rice flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 Tbs brown sugar
  • 1 egg
  • 1 cup milk

Directions

  1. Heat oven to 350° F. Melt the butter in an 8×8 baking dish in the preheating oven.
  2. Combine all dry ingredients. Mix well.
  3. Add the egg and milk and combine. Let rest for a couple of minutes.
  4. Distribute the melted butter over the bottom of the pan and up the sides a bit. Pour the batter into the buttered baking dish.
  5. Bake for 20-25 minutes or until toothpick comes out clean.
