Vegan Chocolate Protein Truffles

  • 1 serving chocolate vegan protein
  • 1 pinch ground sea salt
  • 2 oz. coconut milk, unsweetened
  • 1/2 tsp vanilla extract
  • 1 Tbs sunflower seed butter or almond butter, room temperature
  • 1 Tbs 100% dark cocoa powder

Directions

  1. In a mixing bowl, mix together protein powder and sea salt.
  2. With a fork mix and mash in coconut milk, vanilla extract and almond butter.
  3. Using your hands form into a large ball of dough and then roll into 12 even sized balls.
  4. Place cocoa powder on a plate and roll each truffle in the powder.
  5. Refrigerate for 30 minutes and enjoy,

Note: Once you mix dry and wet ingredients together the dough should be a little crumbly. If you have a hard time forming a large ball, add in filtered water, an ounce at a time.
