Grilled Indian Curry Yogurt Chicken

  • 1 cup plain yogurt
  • 2-3 garlic cloves, minced
  • 1-2 tsp fresh ginger, peeled and minced
  • 1/2 lemon, juiced
  • 2 Tbs curry powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 4 skinless chicken breast halves cut laterally to make about 8 thin fillets

Directions

  1. Mix all ingredients except chicken in a large ziplock bag or a flat-bottomed dish.
  2. Add the chicken and coat well.
  3. Marinate the chicken at least 1 hour or up to 24 hours.
  4. Remove the chicken from the marinade and grill over medium-high heat about 12 minutes per side, until cooked thoroughly.
