- 2 Tbs butter
- 1 cup cornmeal
- 1/2 cup soy flour
- 1/2 cup brown rice flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 Tbs brown sugar
- 1 egg
- 1 cup milk
Directions
- Heat oven to 350° F. Melt the butter in an 8×8 baking dish in the preheating oven.
- Combine all dry ingredients. Mix well.
- Add the egg and milk and combine. Let rest for a couple of minutes.
- Distribute the melted butter over the bottom of the pan and up the sides a bit. Pour the batter into the buttered baking dish.
- Bake for 20-25 minutes or until toothpick comes out clean.
