    Best Banana Bread

    1/2 cup butter 1 cup sugar 2 eggs, beaten 4 bananas, finely crushed 1 1/2 cups flour 1 tsp baking soda 1/2 tsp salt 1/2 tsp vanilla Directions Cream together butter and sugar. Add eggs and crushed bananas. Combine well. Sift together flour, soda and salt. Add to creamed mixture. Add vanilla and mix well. Pour into greased and floured loaf pan. Bake at 350 degrees for 60 minutes. Let cool before slicing. Keeps well when refrigerated.

    Cornbread – Gluten Free

    2 Tbs butter 1 cup cornmeal 1/2 cup soy flour 1/2 cup brown rice flour 1 tsp baking soda 1/2 tsp salt 2 Tbs brown sugar 1 egg 1 cup milk Directions Heat oven to 350° F. Melt the butter in an 8×8 baking dish in the preheating oven. Combine all dry ingredients. Mix well. Add the egg and milk and combine. Let rest for a couple of minutes. Distribute the melted butter over the bottom of the pan and up the sides a bit. Pour the batter into the buttered baking dish. Bake for 20-25 minutes or until toothpick comes out clean.
