Fajitas Marinated with Lime Juice and Cilantro

  • 1 1/2 lbs beef skirt, flank or round steak
  • 1 cup beef broth or stock
  • 2 Tbs freshly squeezed lime juice
  • 3 Tbs Worcestershire sauce
  • 1 clove minced garlic
  • 1 Tbs Brown sugar
  • 1 Tbs Chopped fresh cilantro
  • 1 cup thinly sliced onion
  • 1 cup thinly sliced yellow peppers
  • cooking oil
  • tortillas

Directions

  1. Trim fat and outer membrane (if present) from beef. Cut into 6″ lengths.
  2. Slice meat across the grain into long, thin strips. Place in a wide bowl.
  3. Combine broth, lime juice, Worcestershire sauce, garlic, sugar and cilantro
  4. Pour mixture into bowl with meat. Marinate two hours. Drain well before cooking.
  5. Wrap tortillas in aluminum foil. Place in 350° F oven for 15 minutes or until steamy and soft.
  6. Heat a cast iron skillet to very hot and smoking
  7. Carefully add a little oil, then drained beef. Stir occasionally until meat loses red color.
  8. Add onions and peppers. Continue to cook, stirring once in a while, to desired doneness.
  9. Serve with warmed tortillas
