- 1 1/2 lbs beef skirt, flank or round steak
- 1 cup beef broth or stock
- 2 Tbs freshly squeezed lime juice
- 3 Tbs Worcestershire sauce
- 1 clove minced garlic
- 1 Tbs Brown sugar
- 1 Tbs Chopped fresh cilantro
- 1 cup thinly sliced onion
- 1 cup thinly sliced yellow peppers

Directions
- Trim fat and outer membrane (if present) from beef. Cut into 6″ lengths.
- Slice meat across the grain into long, thin strips. Place in a wide bowl.
- Combine broth, lime juice, Worcestershire sauce, garlic, sugar and cilantro
- Pour mixture into bowl with meat. Marinate two hours. Drain well before cooking.
- Wrap tortillas in aluminum foil. Place in 350° F oven for 15 minutes or until steamy and soft.
- Heat a cast iron skillet to very hot and smoking
- Carefully add a little oil, then drained beef. Stir occasionally until meat loses red color.
- Add onions and peppers. Continue to cook, stirring once in a while, to desired doneness.
- Serve with warmed tortillas
