Japanese Restaurant Ginger Dressing

  • 1/4 cup minced onion
  • 2+ Tbs minced celery
  • 2+ Tbs shredded carrot
  • 2 tablespoons minced fresh ginger root
  • 1/2 teaspoon minced garlic
  • 2 tablespoons ketchup
  • 1/3 cup peanut oil
  • 4 teaspoons soy sauce
  • 1/6 cup rice wine vinegar
  • 2 teaspoons white sugar
  • 2 tablespoons water
  • 2 teaspoons lemon juice

Directions

  1. Combine all ingredients in a blender. Blend on high speed for about 30 seconds or well-pureed.
  2. Use promptly or store refrigerated in a sealed container or bottle.
